The female soul that can replace the Dragon soul as Champion of the Light at times is Amaresu (who wields the sword of the sun).
Oh I doubt it's called "Dragon"(as is the reason I said "female Dragon", after all I rather doubt the Lord Dragon is called "the Lord Dragon" in most ages), but like you said, RJ said that souls don't change gender, and also that the Pattern would weave out a female into the role of "Dragon" if it needed to, so those two things equal there being a "female Dragon".
That being said, where you get the name "Amaresu"?
