I think that if he had been healthy he would have just dragged it out for book after book, and we might be waiting for Book 18 at one point.
My bet is that there would have been not three of them - Sanderson has shown with the result how little sense that made to split the book this way - but two, a very fat one comprising the events of acts 1-2 (TGS/TOM) and a shorter one with act 3.
I've always figured it'd be something like some of the paperback versions of G.R.R.M.'s A Storm of Swords. One story in two books.
Early release for fans or not, the decision to split into 3 books rather then 2 with Veins of Gold as the climax of the first was a truly massive stuff by all associated.
Sure it would have meant a book containing all of what's in TGS (minus the filler Mat/Perrin chapters) plus some of the Mat, and most of the Elayne and Perrin plotlines from TOM, but it would have removed the timeline inconsistencies and brought the necessary despair of Rand dark, Perrin pinned, Moraine still trapped, Avi's visions, Egwene imprisoned and then the Seanchan attack and Mat stuck all happening at the same time in the same book.
I still can't understand how they've gone against RJ's desire for it not be split like that.

5, but I enjoy the series so much that 15 would have been fine with me. *NM*

No. Once again, accelerating the pace is not the same as finishing in one more book.

Please distinguish between the publisher's hopes and Jordan's intent. You ignore RJ's character too.
