He simply does not seem to have the nose for interesting situations that RJ had. Not only does Sanderson fail to make the visions particularly interesting or entertaining, he also fails to use them as chronological markers, which RJ frequently did, instead providing completely generic scenes: Rand and Min eating, Rand sitting in a chair looking grim, and so forth.
Showing specific scenes nails down the timeline. With RJ, a mistake like that is an oops, with Sanderson, it's "This guy has no idea what he's doing!!!". Plus, if they decide to combine two Mat viewpoints later on while in the editing phase, a vision could easily get moved out of place. Keeping them generic prevents that. It's obviously not an ideal solution, but it's safer and forgivable, IMO. This way we can know that the visions are still happening, so we don't have to wonder if they're disappearing or if Sanderson forgot they existed.
