It's just unavoidable. The times when the ta'veren think of each other can't always coincide with when the one they're thinking of is doing something amazing, or even something mundane but still worthy of comment.

Interesting things can be going on at all times if the author decides it's so. Rand eating a meal with Min could have been interesting in itself. It was on the day Moiraine was rescued. He could have seen Rand eating a meal with Min, and Rand looked way less stressed than he had in weeks past, or Rand was smiling. Anything. Like I said, I enjoyed Rand seeing Mat and Tuon, then having a hilarious thought about that. That could have easily been boring, but it wasn't (imo). All of the whirlpools in the past gave some insight.
