You have the Father, the Warrior, and the Trickster. Odin, Thor, and Loki. I think this has been done before, but there are bits and pieces taken from each into all three, but predominantely I see Rand as the Father, Perrin ironically enough as the Warrior, and Mat as the Trickster
I've seen a slightly different setup:
Rand as Tyr, they both lose a hand, and Tyr's a warrior god.
Mat as Odin: Odin hung from a tree for knowledge, he fights with a spear, he's attended by two ravens (whose names mean Thought and Memory), he wears a wide-brimmed hat, and lost an eye (as people suspect is going to happen in ToM). Mat is clearly more related to Odin than Loki.
Perrin as Thor: Naturally, though he's a lot closer to the Slavic god Perun.
