Is you can't sit down and flip through channels. You have to go and specifically look for a show you want to watch, instead of just seeing what's on. Also, you can't watch anything live. It seems like too much hassle.
Most of the streaming sites make it pretty easy to browse around and discover new stuff, but you're right, it's not quite the same as flipping through channels. As to live stuff, you still get all the major networks free over the air in HD, so you still feel pretty connected. With the notable exception of sports, there are very few things on cable tv that need to be watched "live" in any sense of the word.
As to the hassle thing. . .is any of what you mentioned more of a hassle than spending 1/3 of your tv time watching commercials, and paying $50-100/mo that you don't need to?
