I think the revelation of Cersei's incest would be something "that everyone will be talking about"

It is possible that the E7 execution is an incorrect assumption, but HBO is billing it as the "episode that everyone will be talking about". However, they are also releasing it early on HBOGO, right after E6 airs. So, I find it weird that the execution episode would be aired early, news would have to spread pretty quickly. So perhaps the execution is later?
From IMDB:
E6 - A Golden Crown (pretty obviously what happens here)
E7 - You Win or You Die (hmmm.....maybe it does happen here)
E8 - The Pointy End (something able Arya?)
E9 - Baelor (no idea)
E10 - Fire and Blood (dragons hatch?)

Ned is executed on the steps of the Great Sept of Baelor. IIRC,that is the only real significance of that name in the first book, aside from off-hand dropping of the king's name.
The Win or Die line is what Cersei tells Ned when he confronts her about her affair with Jaime and the kids' paternity. Robert was not even injured yet, so it is very possible that the execution is later. Also, as I said above, Arya's final PoV and appearance in Book 1 is Ned's death, and it makes a good cliffhanger end to her arc as well. The pointy end line could refer to Arya's first kill, which IIRC was a guy when she was escaping the Red Keep after Ned's arrest. All in all, I think you're mistaken about the placement of the execution. Ep 9 makes far more sense.

You can make the first 3 books into a very satisfying series.....3 seasons or so.

If WOT became a TV series, I have to imagine that most secondary characters would be cut.
