Theon is played by Alfie Allen, brother of British singer Lily Allen (and son of actor Keith Allen), who had a song called 'Alfie' on her first album about him being a lazy teenager who wouldn't do anything. There's a rather bizarre video for it, easily locatable via YouTube
Richard Madden, who plays Robb, started off as a model and won the 'Best-Dressed Man in Scotland 2009' Award. He also played Boy George's lover in a BBC drama based on the singer's life.
Iain Glen (Jorah Mormont), Nikolaj Coster-Waldau (Jaime) and Bronson Webb (Will) were all in KINGDOM OF HEAVEN. Glen was King Richard and only briefly appeared at the end of the film. Coster-Waldau was a knight who only briefly appeared at the start. Webb was a blacksmith's apprentice, IIRC. Glen was also in last year's DOCTOR WHO as the priest-captain who gives his life to save the Doctor in the two-parter with the Weeping Angels.
Michelle Fairley (Cat) is the mother of one of the characters in MISFITS and also plays Hermione's mother in the HARRY POTTER movies.
Donald Sumpter (Maester Luwin) played the main villain in Season 2 of BEING HUMAN (UK) and was also a Space Marine in the recent animated WH40K movie. He was also in THE BUDDHA OF SUBURBIA twenty-odd years ago, where his character had a bisexual fling with Sayid from LOST.
Rory McCann (Sandor Clegane) is Timothy Dalton's henchman from HOT FUZZ (the guy who likes to say, "Yarp!".
The late Margaret John (Old Nan) is the nymphomaniac granny from GAVIN & STACEY.
Charles Dance (Tywin, who hasn't appeared yet) was of course Ripley's doctor love interest in ALIEN 3, the main villain in THE GOLDEN CHILD and LAST ACTION HERO, Tulkinghorn in the BBC's BLEAK HOUSE and was also Patrician Vetinari in the last DISCWORLD TV adaptation.
