For starters, that's why those movies can get away with a PG rating - because the faceless underlings who get mowed down lack any defining human characteristics. Compare with Revenge of the Sith (which got a PG - 13 rating), in which the viewer is treated to the brutal massacre of Jedi who look like clearly defined individuals, among other things.
Also lasers = no blood, except for when Obi-Wan cuts that guy's arm off in the cantina ...
Which is weird because doesn't the lightsaber immediately cauterize(sp?) any wound? So there shouldn't be blood right?
There wasn't any when Luke got his hand lopped off.
