My concoctions usually turn out pretty well, but I have had a few that were quite bad.
As for Food Network shows, I prefer Good Eats. Knowing the how and why of cooking has made it easier to know what I can change in a recipe without completely destroying it, and makes me a little more confident when making up my own recipes. Alton Brown also makes it more entertaining than most hosts.
