The Second Age spans 3441 years and ends with the first downfall of Sauron, the primary antagonist of “The Lord of the Rings.” Jackson’s movies begin with a prologue set at the end of the Second Age explaining Sauron’s defeat, so it would appear Amazon’s series will take place in the years where Sauron rises to power. Events in the Second Age that the series could focus on include Sauron building his forces in Mordor, the creation and distribution of the rings of power, and the destruction of Númenor. Considering the island’s appearance on the map and its legacy within Tolkien’s world, it appears likely the series will have much to do with Númenor.

It's mostly just a flyover time in which little of note happens aside from setting up the third age.
"oh, but Sauron's rise to power" and all that. Only... That's basically it as far as canon goes. He "rose to power" and such... Things are just kind of quickly summarized as "having happened". Meaning that any show based on that time are basically going to end up as 95% fanfic, with 5% Tolkien garnish.
