Star Trek is certain to pull me out of the woodwork to come and see what's going on.
You are correct. DS9 has the best writing. By far. There are some good one-off episodes in all the series, but DS9 had quite a few that really stand out.
Even for the non-Science Fiction fan...or the non-Trek fan....DS9 is worth a watch for the great writing and acting.

I've only made it through series one, and perhaps part of series two. I keep hearing good things, however
I don't remember it as slow going but then it did take us quite some time to settle down to DS9. I think we had made it through all of Farscape, Enterprise, and all of the other start trek series before settling down to watch DS9. We like a little sci fi in our evenings and there isn't a great deal of choice.
In hindsight though we never had to try to fight the urge to binge watch DS9 so you may have a very good point. 
Trying to convince the hubby that we don't need to have another re-watch of Farscape and hoping that something sci fi and good hangs around long enough to grab our attention.
