Good times, good times.
My highest was only a level 40 paladin, but he had skills coming out the wazzoo. Since you are familiar with it, you already know how damn hard it is to actually gain skill levels and just how ruthless and unforgiving the combat is and often how tedious the non-combat skills are to gain. I could have probably hit 50-60 (should have, I wanted those nifty lvl 50 titles) but I just couldn't force myself to grind more scholarship ranks so I ranked every other skill in the game instead.
I had like 60! ranks in targeted magic and since Paladin's don't even get targeted spells, all of it came from rubbing runestones and sitting in front of the warmage guild listening to others teach. Also had something like 30 ranks in musical lore which is a useless skill for non-bards. I managed to level up 100 ranks in every single weapon category beyond my primary. Even light and heavy thrown. Too many people simply stuck with light/medium/heavy and the occasional two-handed edge but I showed the newbs hunting globlins west of crossing the power of pikes and throwing spears. My obsession lead me 200 ranks in each armor skills besides my primary of heavy plate. I even managed over 300 ranks in primary magic, harness, and power perception because I would spend every waking moment casting spells. Keep in mind that magic skills are tertiary skills for paladins and they gain ranks so slowly, but I ended up with higher ranks in them than equivalent level mages.
I left cause it was taking too much of my time and with school starting up again, my summer of living as a reclusive shut in came to an end and I gave it up. I managed to pay for part of my tuition and books by selling off over 2000 platinum kronars though. At one point, I even had two snake charms .
