Min-maxing to that extent absolutely destroys any possibility of immersion. Which isn't as much of a big deal at the level cap, because at that point most of the game is enjoyed via social interaction and meta-game stuff like guild community... but while I'm leveling, which is when you'd use quest helper, having a sense of immersion is crucial to my enjoyment.
I can understand why someone who's trying level an alt as quickly as possible might use it, but even then I think it does more harm to the experience than good.
I myself use Auctioneer, Atlas, Atlas Loot, Omen, and... that's about it these days. If I were hardcore raiding I'd probably tweak things a lot more, but for my purposes these work.
