I've played for more than 30 hours so far, but my sneaky fire mage is still only level 13. I'm not sure where all the time has gone. I spent a bunch reading books and more looking at the scenery, but still.
I enjoyed the haunted barrow in that town at the foot of the biggest mountain. Defeating the traps, figuring out the mystery. I was standing in the guy's room and thinking, hey, that looks like a door over on that wall. And later, when I discovered the real dungeon beneath the barrow, the one that was twenty times the size of the barrow, and then I beat it, I emerged from a secret door right into the guy's room, through the thing that looked like a door. Great dungeon.
Including two scripted fights, I've downed five dragons now, and each one has been a lot of fun. The one time a pack of wolves helped me was pretty cool, until they turned on me.
I've come across a couple old orcs looking for a good death, and I gave it to each of them.
Watching the northern lights is pretty awesome.
I enjoyed discovering Labyrinthian, which I had heard of in one of the books beforehand.
Becoming a werewolf.
Eldergleam Sanctuary was gorgeous, and then I stabbed the tree, and then I was afraid I had made a terrible mistake.
There's still a lot more to come for me. I've only been to one of the five major cities, and haven't touched the mage guild, thieves guild, dark brotherhood, or the rebellion quests yet.

This. The dungeons are great compared to the abysmal monotony of Oblivion. *NM*

Do you all recommend doing the main quest straightaway? A bit at a time?
