Anyway, there's a time and place for realism, true. I just think a lot of modern games emphasize it too much. Sometimes it's just not fun to be too realistic. You never have to eat or drink in RDR, for example. You can take multiple gunshots, wait a few seconds, and then take more gunshots. And as for horse specific stuff, you never have to take care of it in any way, ever. You can run it for an infinitely long time as long as you give it a few seconds to slow down every once in a while. Why can you do these things? Because the alternative would not be fun. Who wants to spend thirty minutes wielding a virtual brush and poop shovel every time they finish a ride? No one. Similarly, I think it would be more fun if they loosened up the physics a bit. *shrug*
