You can tell the difference in the horses by their coloring. You might not know exactly what it is until you see the deed, but if the horse is a different color, it's a different horse. What I found annoying were the achievements to get different horses, because you have no clue as to where they might be.

There is one cool secret acheivement that is fun. Kidnap a woman and get away, head to the railroad tracks and put her on them. Wait for a train to come by.
