My mind is clearly failing me, because I only just noticed that.
Anyway...
For PS3 RPGs, you may want to get Final Fantasy XIII, or Star Ocean: The Last Hope. Since you're a PC gamer, I assume you know all about Oblivion, Fallout, Dragon Age, and other such games, so there's no point in you getting them on a console when they're better on a computer anyway.
With the PS2 there are more Final Fantasies that you may be interested in. There is also a series of games called Disgaea (actually the latter sequels of this series are on the PS3) that is a tactical RPG along the lines of FF Tactics. It's very...Japanese though. So approach at your own discretion, lol. There's also the Xenosaga trilogy of RPGs, and the first one of those games is quite good. However, the second is fairly awful, and I never managed to make it through it in order to play the third, so again approach at your own discretion and risk.
For PS1 RPGs, I would strongly recommend Xenogears, and possibly Chrono Trigger's bastard sequel, Chrono Cross.
Non RPG games that you might want to check out are the entire Metal Gear Solid series, the Uncharted series, and the games Jak II and Jak III on the PS2 (these two games are part of a trilogy, but the first game is just a kinda average platformer, while these blend storyline with humor with shooting action, and are really quite fun).
