I'd recommend suscribing to huskystarcraft and psystarcraft on youtube, for starters. psy plays zerg a lot, but he'll do protoss as well sometimes. husky has commentary on a 5-game series between Silver (terran) and HuK (protoss) that you'll find very educational
As Zalin said, it's important to scout asap so you can go for the counters of what they're building. Which means needing to know all of the unit/race counters. Also look up some of the various strategies on websites, like the protoss four-gate strategy and, of course, how to prevent rushes.
You may also find it useful to go back and save/watch the replays of games you got trounced in to see what they did, and how - as well as what you were doing at the same time as them.
