Boss type A: Bosses like the one you describe and don't seem to like. These exist to challenge the player, push them to work harder, and might require multiple tries to beat and progress. For many players, including you from the sound of it, these suck. Examples: Ninja Gaiden, F-Zero, Super Smash Bros. Brawl, pretty much anything from the SNES era.
Boss type B: Some bosses don't really exist to challenge you, so much as to break up the pace, add variety, and give you something bigger to triumph over - this type is often a pushover. Example: most bosses from Super Mario Galaxy or recent Zelda games.
Of course, which category a boss falls into is relative to your skill level.
The game industry is gradually moving towards group B more and more, which is good news for a player like you.
