it may be the fiber that is giving you trouble. So give your body as much help as it can get....make puree's...things that are filled with veggies, but they are already quite broken down, pea soup, fruit smoothies, etc.
You know... that's so simple, but it's a REALLY good idea (since I think you're right about the fiber). I'm definitely going to try that. May even go pick up the $6 food processor I saw at Goodwill.
I'd just experiment with certain ways of preparing and certain foods. One day go crazy with creamed corn, another day eat lots of chicken, etc...and just see what your body is willing to process. At least it will give you options for fueling your body until you get the health stuff figured out.
*nods* I've started keeping a food/body log just so I know how I react to stuff. It's been useful.
You should also check to see if they have immersion blenders (aka stick blenders); with one of these you can just stick it in the pot of whatever it was that you cooked and puree it up there...saves a lot of time on clean up.
