All I have to spice things up are a yellow onion, and some misc spices.
I never really think of them as an individual dish, more something served inside a burrito or as a side with rice to something else. Ham and pinto beans cook well together in a Crockpot, for when you're using dried beans instead of canned. If you've got any tomato past or tomato sauce lying around, works pretty well with copped onion, beans, and some garlic and chili powder.
Bit of a classic here
2 cups pinto beans, dry
1/4 pound salt pork, diced
1 cup chopped onion
1 clove garlic, minced
2 teaspoons salt
dash pepper
2 cans tomatoes, (16 oz each)
3/4 cup diced green pepper
1 tablespoon sugar
6 drops bottled hot pepper sauce
You just through that in a pot an simmer for a long while.
Hrm, that seems relatively cheap to get what I don't already have of it..... I shall give it a go. Much abliged.
