With your iPod plugged in, you click on it (if it doesn't automatically go to the iPod device screen that shows you how much stuff is on your iPod) and there will be tabs at the top. One of them *should* be playlists (I'm doing this from memory since I can't see it right now). Checking certain playlists for that iPod will keep the other stuff from downloading. You'll probably have to uncheck podcasts and other stuff in the other tabs to keep them from syncing as well.
