1) What did/do you eat in college, predominately? Did it even resemble healthy eating?
Actually, I do eat a pretty wide variety of foods, but all of it is pretty simple most of the time and the faster to cook the better. Lots of leftovers.
2) Where you limited by time, convenience, finances and/or motivation?

3) What do you think is the ONE THING that all college students should stock in their cabinets/kitchens?
I really think everyone should have a well-developed spice cabinet. Why? Because with some spices, you can make anything taste interesting. Cumin/red pepper or Curry/redpepper are currently my "this really needs to be more interesting" friends.
4) Name some other less-ultimate items.
Breakfast--oatmeal, canned/fresh fruit, and frozen sausages.
Everything else--pasta/rice, canned/frozen fruits and veggies, frozen meat (if you have a freezer), beans
With this assortment of items, you can eat well, relatively healthy, and for (really) damned cheap. And if you've properly cultivated your spice rack, you can really mix up your lunch/dinners.
