Which is why I keep TRYING to do it...
The other problem is that I'm only one person. I like a lot of variety (i.e. I can't eat the same thing every day), which means I buy a lot of different things...but I'm eating less of each item. Which means I have a lot of spoilage. Which is super frustrating, both financially and in the sense of "awww I wanted to EAT THAT".
But yah, between stress, time constraints, etc...etc... it's really hard to eat healthy some times. After these coming exams are over, I'm going to spend the weekend pre-chopping, prepping, etc...etc...
If I can anyways. Our fridge doth explode.

Well now you can just juice anything you aren't eating, right? Good luck on your exams!
I do wish more produce was available in an "only buy what you need" format, though, because I can have that problem too even though there are 2 of us. I'm getting better about how to plan for multiple uses out of the same stuff though. What I really need to start doing is finding ways to avoid wasting things by freezing/keeping to make stocks and such, but I haven't taken the time to research that and don't currently have the freezer space to do too much of it.
I'm sure this will get better when I retire and can just go to the grocery store 4 times a week
