The first time these features show up on your page, you get little popup boxes explaining what's going on, with "click here for more info" options. People usually just impatiently dismiss those boxes so they can get on with their Facebooking though. And I can understand that. However, instead of complaining, it would be nice if people would take the time to educate themselves on how things work. Which is, by the way, very easy to do. Blog.facebook.com explains the changes very well, as do the top 5000 or so results that come up searching Google for "Facebook changes" or whatever. 
Anyway. I totally understand that change is hard, and that not everyone will like every change. That's fine. I just get annoyed when the vast, vast majority of complaints people have are made in ignorance, and are totally off-base.
No, you still only have to click once. When you have top news as well as recent news to view (such as you might have after not visiting the site for a day or so) the very top link on your feed says "3 recent items" (or something along those lines). Clicking that link scrolls your feed down to the beginning of the recent items. I'd post a screenshot, but I've visited FB recently so I don't have the link at the moment.
But yeah, should just be one click.
I agree that it's very annoying that they seem to reset a lot of your defaults every time they change. I'm not sure there's any good justification for that. They ARE trying to improve the email overload, though. Most users should have been sent (via email, ironically
) the following notification a couple days ago:
"We're trying out a new feature to reduce the amount of email you receive from Facebook. Starting today, we are turning off most individual email notifications and instead, we'll send you a summary only if there are popular stories you may have missed. You can turn individual emails back on and restore all your original settings at any time."

I'm one who never had a problem clicking on "recent news" to get things in the order I prefer when it came up as top news instead. Now I have to either scroll or click multiple times to get what I already had before.

And they really need to stop using "e-mail me all of this! I CAN NEVER GET ENOUGH MEANINGLESS AND REDUNDANT E-MAILS!!!!" as the default setting for everything
