Cheddar can also be quite decent, but I'm more fond of our Prästost ("Priest cheese", used to be made in churches from part of the tithe paid in milk), especially if it is stored long enough.

Those are processed, yes. As is "American" cheese. As is most cheese you find in supermarkets.
