I don't actually know anybody who refrigerates their bread.
Both my girlfriend and I have always put our bread in the fridge, even before we met. I've noticed that it gets less fluffy during Week Two, but it's always eaten up by the end of that week and it never gets mold on it, so you know, I've never tried to fix what wasn't broken.
Sounds like I might want to try keeping it out though. See how it goes. I don't know how long it takes mold to build on bread outside of the fridge, but if it takes longer than two weeks we're good. Well, for my bread. Sometimes she buys bread that takes longer to use up.

Depends on what kind of bread you have. Bread without preservatives will mold more quickly. *NM*
