It's simply using feces as a source for chemicals, in much the same way plants use dirt (which is mostly rotted matter) for chemicals. These steaks are as much feces as your normal steak is dirt; it's just that the researchers have found a way to eliminate the relatively lengthy middleman of metabolic processes.
