If it's a main dish, I'd go with a simple pasta dish. It's tasty and easy to prepare. Plus you could do a pesto pasta, which is actually quite nice cold as well as hot, so you could solve the transportation problem that way.
If it can be a side dish...make something like Bruschetta or Spring Rolls. They're both pretty easy to make and very very tasty.

And there are going to be vegetarians present, the gracious thing to do is to make a hearty main dishish item.
The pesto pasta is a good idea.
