There is nothing wrong with epic fantasy you had just listed most of the series I would recommend. Some of what Aemon said about Zelany is true but they are still worth reading if for the place in fantasy literature if nothing else though going past the first five is a bit of a waste better to switch to Lord Of Light. You don't win as many Hugo and Nebula awards as he did without some skill.
Another set older books worth reading are the Robert Silverberg's Majipoor novels. Not exactly epic fantasy but still still a good read.
