I'm also open to suggestions for other good series!
In terms of traditional fantasy, George Martin's A Song of Ice and Fire (four books out, fifth to be released at some point next year hopefully), Tad Williams' Memory, Sorrow and Thorn (three books, finished), Guy Gavriel Kay's Fionavar Tapestry (three books, finished), Steven Erikson's Malazan Book of the Fallen (nine books out, tenth and final to be released in a year or two) and Raymond Feist & Janny Wurts' Empire series (three books, finished) are some of the best series that are finished or already well underway.
Less traditional but also excellent: Celia Friedman's Coldfire (three books, finished), Tad Williams' Otherland (four books, finished), Roger Zelazny's Amber (ten books, finished).

I actually kind of like Terry Goodkind's writing.
