I would almost think they use the same process as the Pléiade books.
The Dante and Manzoni are true "hardcover" books, as are the three volumes of Aretino and all the Eco books (I got all his fiction books in Italian). The Verga is one of those hybrid things that feels like a hardcover but is somewhat supple.
