Those are the only ones of the notes/history/background things that I've read, and while interesting, they were also incredibly confusing from what I recall. So also how do the Unfinished Tales compare to them, and what is the overlap between the two?
Since it's been quite a few years since I read them, I'm afraid I hardly remember which stories were in those books, though I Gondolin and Hurin featuring in some of the tales.

They're much, much earlier drafts of the Silmarillion.

Should the Simarillion be read prior to Unfinished Tales?

Yes. The Silmarillion provides context and grounding for much of the content from Unfinished Tales
