It would be boring. aSoIaF adapts well because it's interesting and keeps you guessing at all turns. WoT just includes lots of pointless small plots that go nowhere that keep us guessing if they'll ever be finished or not. The overarching plot is somewhat predictable. When I was reading ToM I saw most of the major events coming a couple chapters away and from the discussions recently, WoT is very, very formulaic. It isn't unique enough to spend that type of money on.
GRRM developed a more in depth and more unique world than RJ did with WoT. I like WoT to read but I don't think it would do well enough as an adaptation to ever be worth it. You can see this just with the season distribution. One season to cover 3 books means each book is so boring that you can't just build up to the 1 climax. Few climaxes in WoT are enough to bring a viewer back for the next season let alone next episode.
If you're going to categorically dismiss a series that's sold millions of books and consistently reaches number one on the bestseller list, then I'm not sure you're worth discussing this with. WoT may not be your cup of tea, but to say that it is no ones is plainly not factual. The Wheel of Time has defined fantasy since its initial publishing. ASoIF can very much be seen as a reaction against Jordan's epic formula.
Besides, it's not as if aSoIF is that genius of a story either. Really it's just a bunch of scheming morons who can't get past their own differences to see the overarching threat looming over their heads. It's not much different than politics today.
What makes both series good is the quality of writing and character development. We fall in love with the characters and the scale of the story. That is what makes epic fantasy appealing. And it's the same thing that made star wars appealing too.
