I know I said three downthread, but I have since read on other boards that it's planned as 6 books, two sets of trilogies. The first trilogy is Kvothe's flashback story, and the second trilogy is presumably Kvothe's life going forward--hopefully relearning how to kick ass and destroy the Chandrian.
Also, he's already been expelled from the University and forced to leave. Based on how his stories have not always been as they seemed, that could have been what he meant.

Reading this book, and knowing beforehand that there were six books, I still found myself at the end thinking "Kvothe has way too much stuff to do in his backstory for a single book." I'm sure that Rothfuss will be cutting mercilessly just to cram everything into another 1000 page tome. I'll still love it, of course, but I have little doubt in my mind that there's going to be some major skimming in book 3
