I'll second the suggestion of Pat Rothfuss. He's the first new fantasy author who's blown me away in years. Loved that book!
If you like something along the lines of Eddings, you might like my books, The Silver Serpent, and Keeper of the Mists. In fact, if you NB me your email, I'll send you the epubs, since we're old Wotmania veterans.
If you're open to young adult novels, The Hunger Games trilogy is the best YA fantasy I've read in a long time, though it's dystopian rather than 'classic' fantasy.
Have you read Mistborn? Great series.
As for classics, have you read The Lost World by Arthur Conan Doyle?
