Five chapters is no small number. I don't have ready access to an exact figure, but there couldn't have been more than 50 or so chapters in Feast. Assuming 50 in Dance, 5 = about 10% of the book still left to write, and that assumes that GRRM is done with all other revisions.
The report says the publisher is "hoping to have a finished manuscript by Christmas," not that it expects to have one. GRRM will be away for at least a month or so (I imagine Wert or someone else could give us a more solid return date), meaning he would have about a month to finish roughly 10%. I truly wish it were otherwise.

I will believe it when I see it. I certainly wouldn't put any money on it.

He's been "almost" done for several years now. I'm not holding my breath.
