you definitely don't need to try to understand all the layers and meanings that are meshed into the book in order to enjoy it. It's a great read just as a medieval murder mystery set in a mysterious monastary with a fantastic labyrinth, wrapped up in interesting theology, history, and philosophy.
My problem with books such as this is that I know there are much deeper elements/symbolism/etc that I don't understand so I get frustrated. It's why I can't read Gene Wolfe.

Hm. Just read Foucault's Pendulum a while back. I intend to get on to this eventually.

I started Foucault's Pendulum just last night. I know Tom loved it; what do you think?

It even made me respect postmodernism! Well, a little. Eco's variant.

Oh, I agree. I just wanted to clarify that I think it extends beyond a shout-out to Borges. *NM*
