The reason that most scholars discount the "He is I am" interpretation is that critical scholars looking at the Pentateuch feel it was written by a more primitive mindset upon which higher philosophical meaning was later overlaid, and therefore the name interpretation would be "too sophisticated" and "Greek-like" for the original writers. Interestingly enough, the Septuagint seems to discount the theory as well, because the closest they get to saying anything like that is to call the Old Testament God "ho wn" (with w for omega) - "the existing" or "the being" God.
